Bloody Lychee Eyeballs

These Bloody Lychee Eyeballs are so quick to make- 5 minutes!- and only require 3 simple ingredients. Make them for an extra creepy Halloween party! (Vegan too.)

Ingredients

  • 1 Can lychees This was 14 lychees for my 565g/230g drained can. You can substitute with fresh lychees but they're harder to find. Alternatively, use canned longans which look pretty similar, just smaller.
  • 16 Blueberries or fresh cranberries Note: the seeds inside a fresh cranberry are edible but not too tasty You can also use dried fruits such as raisins, dried cranberries etc or a mix for more flavor, as I did in the photos above. If you use dried fruit, you'd need more than 1 to fill the lychee cavity so you'd need more than 16 for 1 can of lychees! (Dried fruit are also a little more liable to float out if adding to drinks!)
  • 1-2 Tablespoons Jam, honey, or syrup Substitute: raspberry or strawberry jam
  • 1 teaspoon Red food coloring Optional, only if you want to draw veins and blood around the "eyes". You can substitute with a red jam like raspberry or strawberry

Instructions

  • Roll the fresh or dried fruit in the syrup, jam or honey- you want to get the fruit sticky!
  • Brush some of that honey, jam or syrup inside the cavity of the lychee.
  • Stuff the lychee cavity with the fruit of your choice, making sure to press (gently) onto the jam.
    Note: choose unbroken lychees- some have holes on the other side too, which the fruit can fall out of! (Not good.)
  • Optional Step: For extra scary Halloween eyes, use red food coloring or raspberry jam to draw streaks around the hole to mimic bleeding eyes.
    Note: You can do this with a chopstick, the tines of a fork or a small brush.

Notes

How to Serve
These can be served on their own as a healthy Halloween dessert, or in a drink!
  • Halloween Mocktail: add these lychee eyeballs to lychee tea
  • Witch's Brew Cocktail: add these bloody eyes to champagne and make a Halloween cocktail. Maybe add a few drops of pandan extract or pandan syrup for an eerie green color?
Storage
Extras can be stored in an airtight container in the fridge for 2-3 days.
