Ingredients

  • 1 cinnamon stick Substitute: 2 Masala Chai Tea Bags. You can the tea, ginger and cloves too if using the Masala Chai tea bag.
  • 2 ground black pepper 3-5 turns of the pepper mill or to taste
  • 1 inch fresh ginger Slice, no need to peel- just ewash well. Substitute with ginger powder if using cow's milk
  • 3 cloves
  • 1 Black Teabag Substitute: ½-1 Tablespoon black tea leaves
  • ¾ Cup water
  • ½ teaspoon Turmeric Powder
  • 1 Cup milk You can switch to a plant-based milk of your choice if vegan, such as almond milk, soy milk, oat milk etc. To make the milk more frothy, heat it before whisking.
  • 1 Tablespoon coconut milk
  • 1-1½ Tablespoon honey
  • 1 teaspoon vanilla extract

Instructions

  • Optional step to make spices more fragrant: Pound the cinnamon, cloves with the back of a rolling pin. In a dry pot, lightly toast the spices till fragrant (for 2-3 minutes over low heat).
  • Add the ginger, pepper and water the same pot, (If you skipped the previous step, make sure the cinnamon and cloves are in the pot.) Cover, bring to a boil over high heat. Once boiling, reduce the heat and simmer on low for 5-6 minutes.
  • Switch off the heat, and steep the tag in the covered pot for 5 minutes.
  • Mix in the turmeric, vanilla and honey. You can make this 2-3 days before you want to assemble your Golden Chai Drink. (This recipe makes 1 Cup so you have to double or triple it if you want a bigger batch.)

To assemble the drink

  • Heat the milk and coconut milk, then mix with the (stirred)spice-tea mixture you made previously.

Notes

There is a lot of flexibility around the spices used in Masala Chai Tea. Feel free to add other spices that you like, such as cardamom. Even if using a Masala Chai tea bag, you can add spices to accentuate the spices you like (as the flavor of a Masala Chai tea bag is milder than making from scratch with spices.)
