Savory Granola with Thai Curry Paste

I am Team Savory over Team Sweet, so I love giving classic sweet recipes, such as this Asian granola, a savory spin. This savory granola is great as a salty snack, or tossed over salads and soups.

Ingredients

  • Cup sugar
  • 2 Tablespoons sesame seeds
  • 1 Tablespoon chia seeds
  • 1 teaspoon garlic powder

Oat-Nut Mixture

  • Cups oats Use old-fashioned rolled oats for a crunchier granola. (Quick oats will be too powdery and steel-cut oats will make the granola too hard.)
  • ½ Cup pumpkin seeds

Seasoning Mix

  • Tablespoon Thai red curry paste
  • Tablespoon dark soy sauce
  • ¼ Cup olive oil

Instructions

  • Mix the garlic powder, chia seeds, sesame seeds, and sugar well.
  • Mix the oats and pumpkin seeds then pour in the spice mixture from the previous step.
  • Stir the curry paste, dark soy sauce, and olive oil till well mixed. Combine with the oats mixture from the previous step.
  • Bake at 350F/177C / 157C fan for 25-30 minutes. You must check on it from the 20 minute mark as it becomes overbooked more quickly than a sweet granola.
