Ssamjang (Korean dipping sauce)
Ssamjang is a delicious Korean dipping sauce- perfect for chicken, beef, tofu,lettuce wraps or Korean BBQ meat. (As promised, my recipes are not for flavor wimps and this is definitely one of the most boldly flavoured Korean sauces!)

1 Small pot
1 heat proof spatula
- 3 Tablespoons doenjjang (Korean soybean paste)
- ¾ Tablespoon gochujang (Korean red pepper paste)
- ½-¾ Tablespoon honey Substitute: white sugar
- ½ teaspoon sesame oil
- ¼ red onion sliced
- 1 spring onion sliced
- 1 teaspoon sesame seeds optional, lightly toasted
- gochugaru chili flakes optional: if you want a spicier sauce, you can stir in a bit- Start with ¼ teaspoon and taste till it's a the right flavor.
Over low heat, heat the doenjang, gochujang, sugar (if using) and sesame oil in a pan.
Stir and heat till it bubbles around the edges. Turn off the fire and stir in the honey (if using honey instead of sugar.)
Add the sliced onions and sesame oil- the sauce should not be too thick and should run down a spoon. If not scoopable, add water, bit by bit till it reaches the right consistency, and stir well.
Plate, sprinkled with spring onions and sesame seeds, and serve.
