Lychee Juice Recipe

Lychee Juice, also known as Litchi Juice, is a simple but deliciously refreshing drink that is perfect for summer. You really only need 1 ingredient- lychees- but I've also shown you how to make different tried-and-tested variations of the drink!

Ingredients

  • 1 can lychees keep the brine too. If using fresh lychees, substitute with 10 fresh lychees, 1 Cup water and 1 T sugar.
  • 1 Lemon Optional Garnish and flavor.

Instructions

  • Open the can of lychees and take out 1-3 lychees.
  • Put the rest of the lychees, along with 1 Cup of the lychee brine, into the blender and blitz till well-processed.
    Tip: the rest of the lychee brine can be kept for lychee tea or lychee jelly.
  • The litchi juice won't be totally smooth. Put in a glass, add the whole lychees you reserved earlier and enjoy! Optional: garish with edible rose buds or lemon slices.
    Note: I enjoy juice with bits but, if you don't, strain out the pulp into a glass, squeezing out as much juice as possible. The pulp can be added to your bakes for fibre!
  • Drink immediately or store in the fridge for 2-3 days.

Notes

  • For a spicy kick: Add a 1 inch knob of ginger per can of lychees, preferably peeled, to the blender.
  • For a mocktail: Blend the lychees (but not the brine), add soda water, sweeten with lemongrass syrup and top with fresh mint leaves. Alternatively rose syrup also goes very well with lychee! (Lychee fruit is sweet, with a very floral flavour, which is why it is often paired with rose.)
  • For mixed Juice: Add ½ Tablespoon of fresh Lemon Juice per can of lychees
  • For a Halloween drink: Add rose syrup to the glass before pouring in the lychee juice, then top with a bloody lychee eyeball.
  • Tropical Lychee Mocktail: Blend with other tropical fruits such as calamansi lime, pineapple etc
  • Lychee Soda: after blending the lychees, add to ½ Cup of soda water or sparkling water.
  • Lychee Cocktail: mix with sake, tequila or vodka
