These Bloody Lychees Eyeballs are so quick to make- 5 minutes!- and only require 3 simple ingredients. Make them for an extra creepy Halloween party! (Vegan too.)

- Lychees eyeballs are super simple to make: 3-ingredients, 5 minutes and you're done!
- Creepy: With the red "veins" around the "eyeball", they look like bleeding eyes! Perfect in lychee juice or lychee tea for your Halloween mixer. Together with these severed witch's fingers hot dogs and gruesome Halloween recipes, you'll have the creepiest Halloween party ever! Alternatively, if your kids are more sweet than scary, try these adorable Halloween treats that require no baking.
- Flexible: add just blueberries, without the red lines, and they look like cute monster eyes. Draw in the red veins, and you're down for the spookiest dessert of the year! You can also add them to drinks to make Witch's Brew Cocktails, as shown above!
Note: if you have too many lychees, use them in 1 of these canned lychee dishes!
๐ฅ Ingredients
You will need:
- lychees: canned ones are easier to get at the Asian super markets than fresh, which are seasonal. It'll vary from brand to brand but my 565g can (230g drained) had 14 lychees inside. You can also substitute with canned longans to create the eyeballs.
- small round fruits: Blueberries are the best as the size fits the cavity of the lychee, making them really look like the pupils of the eye. You'll need around 14 per can of lychees. You can also substitute with canberries (bloodshot eyes!)- the seeds are edible, though not the tastiest. For dried fruits, you can use dried longans, raisins or more. (Note that you will have to use more than 1 to fill up the hole though and they may fall out if you're tossing them in drinks. Each packet of dried fruits will have some clumps where multiple raisins have stuck together- try to use those to stuff the lychees.)
- honey, syrup or jam: you can use any of the 3 as long as it's sticky! If using jam, a raspberry jam can also substitute for the "blood" if you don't have red coloring on hand.
- optional, red food coloring: for the red veins around the eyes.
๐ช Step-by-Step Instructions
- Soak your fruit (dried or fresh) in the honey, jam or syup- you want it to be as sticky as possible!
Tip: you can even use a mix of dried fruit- cranberries, raisins, sultanas, currants etc- for a more flavorful sweet treat.
2. Brush some of that sticky syrup inside the cavity of the lychee.
3. Stuff the lychee cavity with the fruit of your choice, making sure to press (gently) onto the jam.
Note: choose unbroken lychees- some have holes on the other side too, which the fruit can fall out of! (Not good.)
4. Optional Step: For extra scary Halloween lychees eyeballs, use red food coloring or raspberry jam to draw streaks around the hole to mimic bleeding eyes.
Note: You can do this with a chopstick, the tines of a fork or a small brush.
Extras can be stored in an airtight container in the fridge for 2-3 days.
Tip: If you want to make it more substantial, you can set the lychee fruit in a round mold and pour clear agar agar jelly around it. Agar agar is full of fibre, low in calories and will really resemble an eye socket!

- Witch's Brew Cocktail: add these bloody eyes to champagne and make a Halloween cocktail. Maybe add a few drops of pandan extract or pandan syrup for an eerie green color?
Note: lychees go extra well with sake, tequila and vodka. Maybe float the eyeballs in a lychee martini or homemade Korean plum wine for a sophisticated but gory Halloween bash?

Bloody Lychee Eyeballs
Ingredients
- 1 Can lychees This was 14 lychees for my 565g/230g drained can. You can substitute with fresh lychees but they're harder to find. Alternatively, use canned longans which look pretty similar, just smaller.
- 16 Blueberries or fresh cranberries Note: the seeds inside a fresh cranberry are edible but not too tasty You can also use dried fruits such as raisins, dried cranberries etc or a mix for more flavor, as I did in the photos above. If you use dried fruit, you'd need more than 1 to fill the lychee cavity so you'd need more than 16 for 1 can of lychees! (Dried fruit are also a little more liable to float out if adding to drinks!)
- 1-2 Tablespoons Jam, honey, or syrup Substitute: raspberry or strawberry jam
- 1 teaspoon Red food coloring Optional, only if you want to draw veins and blood around the "eyes". You can substitute with a red jam like raspberry or strawberry
Instructions
- Roll the fresh or dried fruit in the syrup, jam or honey- you want to get the fruit sticky!
- Brush some of that honey, jam or syrup inside the cavity of the lychee.
- Stuff the lychee cavity with the fruit of your choice, making sure to press (gently) onto the jam. Note: choose unbroken lychees- some have holes on the other side too, which the fruit can fall out of! (Not good.)
