    Savory Granola with Thai Curry Paste

    I am Team Savory over Team Sweet, so I love giving classic sweet recipes, such as this Asian granola, a savory spin. This savory granola is great as a salty snack, or tossed over salads and soups.

    🍪 Ingredients

    You will only need a few simple ingredients for this Thai granola:

    • 3.5 Cups of oats
    • ½ Cup pumpkin seeds
    • ¼ Cup olive oil
    • ⅓ Cup sugar
    • 2 Tablespoons of sesame seeds
    • 1.5 Tablespoons of Thai red curry paste
    • 1.5 Tablespoon dark soy sauce
    • 1 Tablespoon of chia seeds
    • 1 teaspoon garlic powder

    🔪 Step-by-Step Instructions

    1. Mix the garlic powder, chia seeds and sugar well
    2. Mix the oats, pumpkin seeds, sesame seeds then pour in the spice mixture from Step 1.
    3. Stir the curry paste, dark soy sauce, and olive oil till well mixed.
    4. Combine with the oats mixture from Step 2.
    5. Bake at 350F/177C / 157C fan for 25-30 minutes. You must check on it from the 20 minute mark as it becomes overbooked more quickly than a sweet granola.

    Sprinkle it on salads or a charred tomato and yoghurt appetiser.

    Store in a airtight container in a cool, dark place for up to 2 weeks.

    Tip #1: To turn the granola into crunchy clusters, add in 1 white egg. This is especially important if you decide to reduce the sugar used!

    • ⅓ Cup sugar
    • 2 Tablespoons sesame seeds
    • 1 Tablespoon chia seeds
    • 1 teaspoon garlic powder

    Oat-Nut Mixture

    • 3½ Cups oats Use old-fashioned rolled oats for a crunchier granola. (Quick oats will be too powdery and steel-cut oats will make the granola too hard.)
    • ½ Cup pumpkin seeds

    Seasoning Mix

    • 1½ Tablespoon Thai red curry paste
    • 1½ Tablespoon dark soy sauce
    • ¼ Cup olive oil

    Instructions
     

    • Mix the garlic powder, chia seeds, sesame seeds, and sugar well.
    • Mix the oats and pumpkin seeds then pour in the spice mixture from the previous step.
    • Stir the curry paste, dark soy sauce, and olive oil till well mixed. Combine with the oats mixture from the previous step.
