⭐ Why This Recipe is a Star
- Super easy yet delicious: Like brown sugar cookies and Nutella chocolate cookies, these 3-ingredient almond flour cookies are some of the easiest cookies you can make. Moreover, they only require simple ingredients that you can find at any grocery store and no special equipment, not even a cookie cutter, rolling pin or mixer! 🥘 Ingredients
You only need 3 simple ingredients:
- Almond Flour: The flavor of the fine almond flour is strong, so I don't add almond extract to boost it. You can, however, add 1-2 drops if you wish. (If you like almonds that much, you'll love these crispy butter almond cookies!) Alternatively, you can process your own blanched and skinned almonds for 20-30 seconds to make your own almond flour. (For best results, don't blitz for more than 30 seconds or you get almond butter, which is not what we want!) I don't recommend using almond meal if you're looking for a soft cookie. It is slightly coarser and may be made from whole almonds (with their skins on), as the texture of the cookie will change. (Also doesn't look that attractive.)
- Powdered Sugar: Also known as Icing Sugar or Confectioner's Sugar, this is a very fine sugar powder. It has a tendency to clump so you will need to sift it! (If you don't, you'll get a very inaccurate amount when scooping it!) If you switch out for another type of sugar, the texture of the cookie will change. Do not replace 1:1 with caster sugar or the cookie will taste too sweet! For refined sugar free cookies, you can use maple syrup. I'm still experimenting to find the best substitution ratio and will update the recipe accordingly soon.
- Egg: 1 large egg is enough. When you're mixing the dough, it may seem like an act of faith, as the amount of beaten egg seems too little to make a dough. However, keep mixing and you'll see it's just right! If you have the time, brush some beaten egg on top of each cookie to give it a more attractive color!
Optional: place a whole almond, or sliced almond, on top of each cookie before baking. The crunchy almond is a nice textural contrast to the soft and delicious cookies.
Some people like to sift icing sugar over the cookies, but I personally find that much too sweet (though it does look pretty.)
📖 Variations & Substitutes
Some extra ingredients you can throw into the dough include:
- Add in some orange zest
- Add chopped almonds into the dough and a pinch of salt
- Add dark chocolate chips for almond chocolate chip cookies: I don't recommend semi-sweet chocolate chips or milk chocolate as the cookie is quite sweet already.
- Roll the baked cookies in Dark Chocolate syrup then cover with chopped nuts.
- Sprinkle cocoa nibs in the dough: the faint bitterness is a nice contrast to the sweetness of the almond.
- Add vanilla extract.
- Almond flour peanut butter cookies: substitute the egg for peanut butter and the icing sugar for maple syrup.
🔪 Step-by-Step Instructions
Preheat the oven at 350F/ 177C or 157C fan.
Add the sifted sugar, beaten egg and blanched almond flour into a large mixing bowl then mix well till you get a moist cookie dough.
The dough will be very stiff at the beginning but keep going and you'll get there.
Use a small cookie scoop to scoop dough onto the cookie sheet/ Silpat/ parchment paper.
Optional: top with a sliced or whole almond.
Bake for around 15 minutes or till lightly golden. Allow the cookies to cool on a cooling rack before storing. Serve with a cup of coffee!
Note: The cookies don't spread much so you can place them fairly close to each other- about 1 inch apart is more than sufficient.
🥡 How to Store
Store baked cookies in an airtight container at room temperature for 3-4 days.
Unbaked dough can be frozen for a few weeks till you want to bake.

- 1 Cup almond flour If you use almond meal instead, the texture will be less fine and a bit coarser
- ⅓ Cup Icing Sugar Please sift or there will be sweet lumps in your dough. Do not replace 1:1 with caster sugar or it'll taste too sweet.
- 1 egg Make it 2 eggs if you plan to egg wash the cookies.
- sliced almonds or whole almonds Optional topping that will give the cookies more texture.
Instructions
