⭐ Why This Recipe is a Star

    1. Quick and easy: This Yuzu Aioli sauce sounds fancy but is so easy to make. You only need 2-3 ingredients and literally seconds!
    2. Delicious: The acidity from the yuzu pairs so well with the creaminess of the mayo. It is perfect with burgers and sandwiches, helping to cut through the fat of the cheese and/ or meat!

    What is Yuzu?

Yuzu, also known as Yuja in Korea, is a citrus fruit with the most amazing scent.

The fresh fruit is hard to find, even in Asian countries outside of Japan and Korea. Hence, my recipe uses Yuzu "Jam" instead of Yuzu Juice.

    🥘 Ingredients

A jar of Yuja-cheong next to Mayonnaise.

You only need a few simple ingredients:

    • Yuzu Jam (Yuja-Cheong): This can be found in many Asian supermarkets or on Amazon. It comes in a glass jar (See photo above.) Unopened, you can store it in the pantry but once opened, it needs to go in the fridge. For a sure bet, go to a Korean grocery store or a Japanese one. In Korean, it's Yuja-Cheong 유자청 and in Japanese, Yuzu Marmalade or Yuzu Jam (柚子のマーマレード.) (There is also a Japanese Yuzu syrup, which is a different, thinner product in a bottle.) A jar can last a long time, so use extra to make Yuzu Konnyaku Jelly. I also show you how to make your own Yuja-cheong here.
    • Mayonnaise: Any brand works but for top results, use Japanese Mayonnaise which is more savory. I love the Kewpie brand! You can also use eggs and olive oil etc to make your own mayo.
    • Salt: Not pictured above but a pinch really helps to enhance the flavor!

Note: if you have Yuzu Kosho on hand, add a bit to make the sauce a bit spicy and more savory!

    🔪 Step-by-Step Instructions

Stirring mayonnaise and Yuzu Marmalade together.
    1. Mix the mayonnaise, salt and yuja-cheong till well-combined.
    2. Use immediately or store in the chiller.

    🥡 How to Store

Store extra in an airtight container in the fridge for 1-2 days, if using homemade mayonnaise. (You can DIY using olive oil or soybean oil, egg yolks etc)

If using store-bought mayonnaise, this creamy spread can be kept for up to a week.

Hi I'm Zhen also known as GGG! I couldn't boil water till I was 18! However, I love creating community and nurturing people, so when I lived abroad (in St. Andrews then London) for 11 years, I started hosting regular parties for friends, and that's how I started cooking and helping out in professional kitchens. (Couldn't cook before that!) I even organised a supper club for charity (which strangers came to!) Learning to cook late, I make sure my recipes go into enough detail for those new to Asian cuisine or who love a test kitchen approach to cooking!
