    Easy Chinese Egg Drop Soup (10 min)

    This easy authentic Chinese egg drop soup is a healthy Asian soup recipe that can be easily made for dinner for one, for two, or a meal for a crowd. You can even add tofu, chicken, noodles, or dumplings to bulk it up. It's a fakeaway recipe better than takeout! (10 minute recipe)

    Ingredients

    You will need a few simple ingredients:

    • 1.5 Cups chicken stock: This is the key to the whole recipe so make sure your chicken stock, whether you use shop bought or homemade bone broth, is full flavoured. If not, you'll need to add some salt and sugar.
    • 1 teaspoon cornstarch: mix in 2 teaspoons of water
    • 1 egg
    • Pinch of turmeric powder: this non-traditional ingredient makes the Chinese Egg Drop Soup more yellow and more yummy. You've to be careful not to add too much or the soup's flavor will change. Alternatively, you can use 100% yolks for more natural yellow color, without the turmeric.
    • White pepper: a pinch gives you authentic Chinese flavor but skip it if you don't have it. Don't substitute with black pepper. (Click here for the best white pepper substitutes.)
    • Sesame Oil: Drizzled after switching off the fire.
    • Scallions: Slice & garnish

    Optional Add-ins: chicken, shrimp, tomatoes, dumplings, noodles, or tofu. You could also add sweetcorn for corn egg drop soup.

    🔪 Step-by-Step Instructions

    1a. Whisk the egg.

    1b. Heat up the chicken broth in a pot. Whilst the chicken stock is cooking, mix the cornstarch and water to form a slurry. 

    1c. Once the chicken stock is boiling, pour the cornstarch slurry into the pot, stirring at the same time.

    2b. Garnish with scallions and sesame oil. Serve with these egg drop soup sides and enjoy!

    🥡 How to Store

    Store extra in an airtight container in the fridge for 1-2 days.

    Be careful when reheating, if you boil it for too long the cornstarch will make it clumpy.

    Tip #1: A more golden color makes the soup more appetising. See the photo below, left for the soup with turmeric powder and below, right for without.

    Ingredients
      

    • 1½ Cups chicken stock If using unseasoned homemade bone broth, you'll need to add some salt and sugar.

    • ½ pinch White pepper
    • ¼ teaspoon Sesame Oil
    • 1 sprig Scallions Sliced

    Instructions
     

    • Whisk the egg.
    • Heat up the chicken broth in a pot. Whilst the chicken stock is cooking, mix the cornstarch and water to form a slurry. 
    • Once the chicken stock is boiling, pour the cornstarch slurry into the pot, stirring at the same time.

    • Garnish with scallions and sesame oil. Serve and enjoy!

    Notes

    Optional Add-ins: chicken, shrimp, tomatoes, dumplings, noodles, or tofu. You could also add sweetcorn for corn egg drop soup.
    When you add them depends on the cooking time. Noodles and dumplings take more time to be cooked, so should be added to the chicken stock first. Only add the cornstarch and egg when the noodles and dumplings are cooked.
    If virtuous, cook the noodles separately to prevent the starch from bleeding into the soup. However, I'm usually too lazy so I cook them in the chicken stock, remove them (to prevent them from becoming soggy) then add them back to the pot after the cornstarch and egg.
    Tomatoes and tofu don't need much cooking, so  you have more flexibility regarding the timing. 
    Serving: This makes a big bowl for 1 person.
