    Easy Teriyaki Chicken Stir Fry

    This teriyaki chicken stir fry is an easy chicken thigh recipes (boneless skinless) recipe. Ready in under 30 minutes, this japanese teriyaki chicken thighs dish- and rice- is a great asian recipe for dinner! (I also have an oven baked version and teriyaki chicken wing recipe if you prefer a more hands-off recipe.)

    You will need a few simple ingredients:

    • chicken thigh (boneless, skinless): 1 lb?
    • 2 garlic cloves: peel and mince
    • 1 inch ginger: peel and grate, keeping the juice (if any- if your ginger is old, it will be on the dryer side.) If lazy, you can mince instead of grating.
    • 1 Tablespoon sake
    • ½ Tablespoon white sugar
    • ½ Tablespoon honey: this gives the chicken a nice glaze
    • 1 Tablespoon shoyu (or light soy sauce)
    • 1 teaspoon rice vinegar: you can use apple cider vinegar as a substitutes but the dish will be on the sweeter side.

    🔪 Step-by-Step Instructions

    1. Cut the chicken into 2 inch strips, then marinate in the sake. Leave out of the fridge for at least 20 minutes so that it's at room temperature before cooking- this helps keep the meat juicy and tender.
    2. Whilst the chicken is resting, mince the garlic and grate the ginger, then mix the sugar, vinegar and light soy sauce.
    3. Add the oil (about ½ Tablespoon) to the pan and heat till almost smoking, then carefully add the garlic and ginger. Saute for a few minutes till fragrant then add the chicken, including its marinade.
    4. Add the mixed sauce and cook till the chicken is cooked through. Taste and, if necessary, add the honey.
    5. Garnish with sliced spring onions and serve with rice.

    Store leftovers, if any, in an airtight container in the fridge.
