This teriyaki chicken stir fry is an easy chicken thigh recipes (boneless skinless) recipe. Ready in under 30 minutes, this japanese teriyaki chicken thighs dish- and rice- is a great asian recipe for dinner! (I also have an oven baked version and teriyaki chicken wing recipe if you prefer a more hands-off recipe.)

You will need a few simple ingredients:
- chicken thigh (boneless, skinless): 1 lb?
- 2 garlic cloves: peel and mince
- 1 inch ginger: peel and grate, keeping the juice (if any- if your ginger is old, it will be on the dryer side.) If lazy, you can mince instead of grating.
- 1 Tablespoon sake
- ½ Tablespoon white sugar
- ½ Tablespoon honey: this gives the chicken a nice glaze
- 1 Tablespoon shoyu (or light soy sauce)
- 1 teaspoon rice vinegar: you can use apple cider vinegar as a substitutes but the dish will be on the sweeter side.

🔪 Step-by-Step Instructions
- Cut the chicken into 2 inch strips, then marinate in the sake. Leave out of the fridge for at least 20 minutes so that it's at room temperature before cooking- this helps keep the meat juicy and tender.
- Whilst the chicken is resting, mince the garlic and grate the ginger, then mix the sugar, vinegar and light soy sauce.
- Add the oil (about ½ Tablespoon) to the pan and heat till almost smoking, then carefully add the garlic and ginger. Saute for a few minutes till fragrant then add the chicken, including its marinade.
- Add the mixed sauce and cook till the chicken is cooked through. Taste and, if necessary, add the honey.
- Garnish with sliced spring onions and serve with rice.
