⭐ Why This Recipe is a Star

    1. Lychee Juice is delicious: lychees are naturally sweet, with a subtle floral fragrance, and iced lychee juice is the perfect refreshing drink for summer! If you love them as much as I do, try these canned lychee recipes!
    2. Super simple: it's a 1-ingredient, 1-step recipe! For more easy Asian beverages, click here.
    3. Lychees have lots of nutrients, such as Vitamin C!

    🥘 Ingredients

A can of lychees next to a lemon and ginger.

    You only need:

    • a can of lychees: you will need the lychees and 1 Cup of the brine per cup of juice. If you substitute with fresh lychees, you may need some white sugar or honey to sweeten the drink (depending on how sweet your tastebuds are!) Use 10 lychees per person to 1 Cup of water and 1 Tablespoon of white sugar or honey.

Note: if you want a smooth lychee drink with no bits, use 1.5 Cups of brine or water.

    📖 Variations & Substitutes

    • Lychee Slushie: Open the can of lychees. Place 1.5 Cups of brine and all but 3 lychees in a container, put in the freezer for 1-2 hours till half frozen then blend.
    • For a spicy kick: Add a 1 inch knob of ginger per can of lychees, preferably peeled, to the blender.
    • For a mocktail: Blend the lychees (but not the brine), add soda water, sweeten with lemongrass syrup and top with fresh mint leaves. Alternatively rose syrup also goes very well with lychee! (Lychee fruit is sweet, with a very floral flavour, which is why it is often paired with rose.)
    • For mixed Juice: Add ½ Tablespoon of fresh Lemon Juice per can of lychees
    • For a Halloween drink: Add rose syrup to the glass before pouring in the lychee juice, then top with a bloody lychee eyeball.
    • Tropical Lychee Mocktail: Blend with other tropical fruits such as calamansi lime, pineapple etc
    • Lychee Soda: after blending the lychees, add to ½ Cup of soda water or sparkling water.
    • Lychee Cocktail: mix with sake, tequila or vodka

    🔪 Step-by-Step Instructions

Lychees and lychee brine in a blender.

1a. Open the can of lychees and take out 1-3 lychees.

1b. Put the rest of the lychees, along with 1 Cup of the lychee brine, into the blender and blitz till well-processed.

Tip: the rest of the lychee brine can be kept for lychee tea or lychee jelly.

Overhead shot of blended canned lychees.

    2. This is what the blended juice looks like. It won't be totally smooth. Put in a glass, add the whole lychees you reserved earlier and enjoy!

Note: I enjoy juice with bits but, if you don't, strain out the pulp into a glass, squeezing out as much juice as possible. The pulp can be added to your bakes for fibre!

    🥡 How to Store

You can make the fresh lychee juice in advance, and keep it in the fridge in an airtight container for 2-3 days.

    💭 Recipe FAQs

How to tell if lychee is ripe?

It will have a lush, floral aroma, with pinkish-red skin. When pressed, the fruit will give a little but spring back. If it's too soft, it may be overripe.

    How to store lychee?

Refrigerate or freeze fresh lychees. (An unopened can of lychees can be kept in the pantry at room temperature.)

Greedygirlgourmet eating 2 sandwiches in Scotland

Hi I'm Zhen also known as GGG! I couldn't boil water till I was 18! However, I love creating community and nurturing people, so when I lived abroad (in St. Andrews then London) for 11 years, I started hosting regular parties for friends, and that's how I started cooking and helping out in professional kitchens. (Couldn't cook before that!) I even organised a supper club for charity (which strangers came to!) Learning to cook late, I make sure my recipes go into enough detail for those new to Asian cuisine or who love a test kitchen approach to cooking!
