These Roasted Gochujang Mushrooms are baked in the oven till umamilicious. This spicy dish is the perfect Korean oyster mushroom side dish (banchan) for Christmas and family dinners- and it only requires 5 ingredients & 25 minutes baking time!

Ingredients
You will need a few simple ingredients for this Korean mushroom side dish:
- 400g (or 3-4) king oyster mushrooms: Do not use baby king oysters . The width and thickness of the mushrooms will affect the roasting time so cut into 1-1.5 inch rounds, and score the cut surface as shown above. For an average sized king oyster mushroom, this would mean cutting into 4 rounds.
- 1 Tablespoon Korean gochujang paste
- 1 Tablespoon oyster sauce
- ½ Tablespoon light soy sauce
- ½ T oil: olive oil or sesame oil
🔪 Step-by-Step Instructions

- Mix the sauces till no lumps remain. Marinate the mushrooms in the sauces for at least 20 minutes. DO NOT SKIP THE MARINATING or it won't taste good.
- Bake at 220/ 200C fan for 25 minutes. (Keep an eye on the oven to see if the mushrooms are burning- if so, cover with an aluminium foil.)
Tip: The crux to roasting mushrooms in the oven is the right temperature. If it's too low, the juices will come out of the mushrooms and make them soggy. If it's too high, your shrooms and sauce will burn.

So delicious, we never have leftovers, but if you do, store in an airtight container in the fridge for 1-2 days.
