Palm sugar, also known as Gula Melaka, is a popular sweetener due to its unique flavor and texture. It is used in many Southeast Asian recipes, such as pandan kueh dadar.
Why Substitute
However, there are 2 main reasons why someone might want to use a palm sugar substitute instead.
1. Environmental Impact
One reason to use a palm sugar substitute is the environmental impact of palm sugar production.
Palm sugar is made from the sap of palm trees- both coconut palm and date palm- which are often grown in large monoculture plantations that can have negative effects on the environment.
The establishing of these plantations can lead to deforestation, habitat destruction for wildlife, and soil erosion. (An example is the terrible haze that floats over to Singapore and Malaysia from the Indonesia's clearing of land to build plantations.)
Additionally, the production of palm sugar can require large amounts of water and contribute to greenhouse gas emissions.
By using a palm sugar substitute, individuals can reduce their impact on the environment and support more sustainable forms of agriculture. Some substitutes can be produced using less water and land than palm sugar.
However, do note that palm trees are maintained for their sap and can grow from 10-100 years, unlike agave which are often killed before they bloom to shorten the growing cycle.

2. Health
While palm sugar does have some nutritional benefits, such as being a good source of potassium and iron, it is still a form of sugar and should be consumed in moderation.

Here are the best palm sugar substitutes that I've tried!
Brown Sugar
Brown sugar can be used as a substitute for palm sugar in most recipes. In my opinion, it's the best substitute for palm sugar as the flavor is similar AND it's something most of us already have in our pantries. (And, even if we don't, we can make brown sugar from just 2 ingredients!)
As such, brown sugar is the palm sugar substitute that I use in both my baking and cooking recipes, such as homemade dark soy sauce and tamarind samosa sauce. (Likewise, palm sugar can replace brown sugar, as I suggested in my brown sugar simple syrup recipe.)
However, keep in mind that switching may alter the flavor and texture of the dish. Brown sugar is typically more moist and can have a stronger molasses flavor than palm sugar so you will need to be careful.
Substitution Ratio: 1 to 1
Note: use light brown sugar not dark brown sugar as an alternative to palm sugar for cooking and baking. However, when making beverages or syrups such as lemongrass syrup, you can consider dark brown sugar or Muscovado sugar.
Jaggery
Jaggery is an unrefined sweetener that is great flavor substitute for palm sugar. (In terms of taste, it's probably the most similar to palm sugar.)Both have a rich, earthy flavor but jaggery is made from sugarcane juice.
However, it's not the most common ingredient so you may not have it in your pantry, unless you do a lot of Indian cooking.

White sugar
White sugar is a refined sweetener and will add a neutral sweetness to dishes.
The taste is neutral and thus much less complex than palm sugar but the bright side is that you can find it everywhere!

Tip: if you have molasses, mix some with the white sugar to make it a better replacement for palm sugar.
Coconut Sugar
Coconut sugar is a popular alternative to palm sugar.
It is made from the sap of coconut palm trees and has a similar taste and texture to palm sugar. Coconut sugar is also rich in vitamins and minerals, including potassium, magnesium, and zinc.
Like palm sugar, coconut sugar will turn the dish it is added to brown, so it is 1 of the best palm sugar substitutes.

Maple Sugar
Maple sugar is another natural sweetener that most of us have in our kitchen already. This is 1 of substitutes I recommend in my post on how to sweeten tea without sugar.
It is made from the sap of maple trees and has a rich flavor like palm sugar, though not a similar taste. Maple sugar is also rich in antioxidants and minerals like zinc and manganese.

Note: a natural sugar does not mean a naturally occurring sugar in food so maple syrup is still an added sugar and should be consumed in moderation.
Date Sugar
Date sugar is another possible substitute for palm sugar.
It is made by grinding dried dates into a fine powder. Like palm sugar, date sugar has a sweet, caramel-like flavor and can be used in a variety of recipes, from baked goods to sauces and marinades.

However, I personally find the flavor of the dates quite strong, so I would only use this if I had no other choice.

Agave nectar is a popular sweetener made from the sap of the agave plant. This plant is found in the Southern US and Latin America. You'll probably be most familiar with it vis-a-vis tequila!
It has a similar taste and texture to honey and can be used in a variety of recipes. Agave nectar is also low on the glycemic index, because it's mainly fructose, which is why some people recommend it for those with diabetes.

Honey is a natural sweetener made by bees from the nectar of flowers.
