    Teriyaki Pasta (20 minutes)

    Teriyaki Pasta is a mouthwatering Asian twist on traditional pasta. You only need 20 minutes and 4 ingredients to make this dish with HOMEMADE teriyaki sauce! (You can, of course, use shopbought, but homemade is healthier and so easy!) Spaghetti, regular noodles, penne, fusili etc all work! If you like teriyaki chicken, you'll love this Asian pasta!

    ⭐ Why This Recipe is a Star

    1. Easy and quick: This easy meal only requires less than 20 mintues and 4 ingredients to make a delicious homemade teriyaki sauce pasta! So simple, you'll be able to make it perfectly even the first time you cook it!
    2. Delicious: Teriyaki sauce goes with almost everything: salmon, chicken, tofu, mushrooms, udon noodles etc. When stir-fried with some butter and pasta or noodles, it's an amazingly savory main dish recipe that will leave you and your guests wanting more!

    🥘 Ingredients

    You will only need 4 few simple ingredients to make tasty teriyaki noodles:

    • pasta: I have made this teriyaki pasta recipe with spaghetti noodles, penne, fusili, and a different type of noodle. (For more info on how pasta differs from Asian noodles, click here.) You can substitute spaghetti and fusilii 1:1 but I find that using a bit less penne works better, if not there's not enough sauce. (So use about 75% of the quantity i.e 7.5oz if the recipe calls for 10 oz.) Alternatively, udon noodles and ramen noodles work as well (but be careful not to overcook- follow the package instructions regarding cooking time.)
    • butter: Sure you can make the recipe with olive oil but it will not taste anywhere as delicious- butter just makes it so moreish!- so I do NOT recommend substituting with (any type of) oil! (You can, however, use ghee.) Use unsalted butter.
    • light soy sauce: not to be confused with dark soy sauce or sweet soy sauce (they are not interchangeable sauce ingredients)
    • mirin: I have tried substituting with dry sherry/ sake and brown sugar, but the taste wasn't as good, so I suggest sticking with mirin. (For more information about Japanese mirin, click here.)
    • Optional:
      • I highly recommend garnishing with sliced green onions as the spring onions add freshness to the savory sauce
      • You can also drizzle some sesame oil and lightly toasted sesame seeds on the pasta if you wish
      • And adding some furikake makes almost everything better!

    📖 Variations & Substitutes

    You can bulk up this teriyaki noodle recipe by:

    • extra aromatic: my pet peeve is slicing aromatics so I often try to see if recipes work without them. I usually cook this teriyaki spaghetti sans garlic, but if you don't mind a bit of extra work, saute 2-3 sliced garlic cloves and/or ½ inch grated ginger in the butter before adding the other ingredients for extra flavor. (Ginger is especially great if you're adding chicken or fish to the recipe.)
    • mushooms: dried shiitake mushrooms or fresh mushrooms both work well here. You can use 4-6 shiitake mushrooms (sliced.) For dried mushrooms, soak in hot water for at least 30-45minutes till soft, squeeze out the water, then slice the caps. (The soaking water can be used for soups.) Heat up the butter, then saute the mushrooms for 3-4 minutes before adding the other ingredients. Fresh mushrooms will release water so cook off the liquid before adding the pasta, if not the sauce will be diluted.
    • leftover rotisserie chicken: add leftover roast chicken or use your leftover chicken teriyaki meat (Just make sure your roast chicken isn't of a clashing flavor! For example, green curry roast chicken leftovers aren't recommended by soy sauce chicken leftovers are!) If adding leftovers, I recommend chicken thigh and not chicken breast, as the latter will dry out when reheating.
    • healthier: some fresh vegetables such as bell peppers, snow peas, or snap peas would make a great addition to this dish. I suggest serving them on the side, instead of adding them to the stir fry noodles
    • spicy: sprinkle some red pepper flakes on top

    🔪 Step-by-Step Instructions

    1a. Cook your pasta till al dente- cook for 1 minute less than the packet states as we will be almost braising the pasta in the sauce later, which will soften it further. (Make sure the pot of pasta water is well salted!)

    1b. Over medium heat, melt the butter or ghee in a pan or large skillet.

    2. If using mushrooms (optional), increase to medium-high heat then add them to the melted butter and saute till cooked and any liquid produced has almost cooked off.

    3. Pour in the light soy sauce and mirin, and simmer for 30 seconds.

    4a. Reduce the fire to medium-low then add in the cooked pasta or cooked noodles as well as 4 Tablespoons (¼ Cup) of the pasta water. Toss till all the pasta is coated with the sauce, and most of it has been absorbed.

    4b. Garnish with green onions, sesame seeds and/ or sesame oil, then enjoy. Goes well with a side of stir-fried bok choy.

    🥡 How to Store

    Store extras in an airtight container in the fridge for 1-2 days. Heat up till piping hot before serving.

    Ingredients
      

    • ½ lb dry fusili or dry spaghetti use ⅜ lb if using dry penne pasta. Reserve ¼ cup of pasta cooking water.
    • 3 Tablespoons unsalted butter substitute: ghee
    • 2 Tablespoons light soy sauce I have tested this with both Chinese and Jpaanese soy sauce (Lee Kum Kee and Kikkoman)
    • 2 Tablespoon mirin Sake + sugar do not taste as good if used as a substitute

    Optional garnishes

    • green onion sliced
    • ½ Tablespoon sesame seeds lightly toasted
    • 1 Tablespoon sesame oil
    • 2 Tablespoons furikake

    Instructions

    • Garnish with green onions, sesame seeds and/ or sesame oil, then enjoy.
