    A Good Brunch Recipe...

    The ideal brunch recipe:

    • tastes delicious (obviously)
    • but doesn't take too long to make (who wants to be sweating it out in the kitchen first thing in the morning when normal people are still staring blearily into their tea or coffee?!)
    • oh, and is somewhat healthy and nutritious!

    I have chosen recipes which:

    • takes minutes to whip up
    • can be made the night before
    • can be batch made, frozen then cooked easily from frozen.

    Savory Pancakes

    My favorite thing about these savory pancakes is that they are freezer friendly- so you can batch make them before the big day, and cook from frozen when Mom comes round. Less stress!

    Waffles

    This delicious Cheese Mochi Waffles Recipe- also known as Moffles!- is crisp on the outside and soft and oozy on the inside! Thanks to the glutinous rice flour, these waffles stay crispy and don't become soggy as easily. On the table in 15-20 minutes, they're perfect for breakfast or brunch! (This recipe works with both a traditional and vertical waffle maker. It is NOT just putting a mochi in a waffle machine!) (Gluten-Free)

    Salted Egg Buns

    It's like a lava cake, but salted egg flavored, in a bao bun. You can even make your own salted eggs for the filling!

    Custard Bao Bun with Salted Egg Filling 流沙包 is a sweet and savory Chinese bun with a molten filling that is often served as a dessert or a snack. This recipe was inspired by a Dim Sum course I took in Singapore- I'll be honest, making bao buns isn't super easy as there are a number of steps, but I've tried to make it as straightforward as possible.

    Steamed Buns

    2 green matcha mantou buns, 1 wrinkled and 1 smooth, due to differing steaming methods.

    Whether it's the pandan or the green tea bun, these can be made in advance so you just need to steam them on the morning of Mother's Day. No stress!

    Easy Matcha Buns (1-rise Mantou)
    An easy matcha bun (Chinese mantou bao) recipe which only requires 1 proof (1 rise), along with a mantou FAQ section on how to use a metal steamer (instead of the traditional bamboo steamer) and why your naturally vegan matcha buns aren't smooth.

    Curry Puff

    Like the mantou buns, these curry puffs are freezer friendly AND can be cooked (carefully) from frozen.

    Super customisable as well- I use a potato filling but you can always switch it up with 1 of these samosa fillings!

    Vietnamese Pancake

    Don't forget to serve with Nuoc Cham, the goes-with-everything Vietnamese dipping sauce! It's sweet, spicy, savory and tangy!

    Crispy Vietnamese Crepe Recipe (Bánh Xèo)
    I learnt this Crispy Vietnamese Crepe Recipe(bánh xèo), a popular and delicious Vietnamese street food, from a Vietnamese refugee in London. These fresh and zingy sizzling pancakes are not difficult to make, but do require knowing a few tricks to get crispy, which I'll share in the post below!

    Vietnamese Sauce (Nước Chấm)
    Nước Chấm is a sweet and spicy, sour and savory Vietnamese sauce (red chili garlic sauce) that is a staple in Vietnamese cuisine- it works as a dipping sauce for spring rolls, seafood, chicken salad, pork, steak, noodles or for fish. It's 1 of my favorite Vietnamese sauces- in fact, so easy to make at home it's 1 of the first sauces I used to elevate my cooking back in college!

    Rice Vermicelli

    Singapore Fried Vermicelli, also known as Bihun Goreng, is delicious, easy to cook and quick to make in under 30 minutes. Using only simple ingredients (no chicken broth needed), it's a complete meal in itself. It's also cheap enough that some hawker centres (street food stalls) in Singapore sell it for only S$2/ US$1.50!
